Obviously, winter conditions start at different times depending on geography and the year itself.  Each region of China has its own ancestral way of celebrating the Start of Winter through different nourishing foods. The season of Winter is governed by the Water Element in Chinese philosophy and cosmology. The organ pair in focus this time of the year is Kidney and Bladder.
